APPALACHIAN WILDFOODS / PERENNIAL VEGETABLES
Fiddlehead fern / Ostrich fern. Grow in part shade, 2-4’ tall, spreads by rhizomes to make a colony
Woods nettle. Common in rich woods with ramps, Trilliums, etc. 2-3’ tall, spreads. Best spring greens.
Water leaf / Indian salad. Edible perennial herb of rich woods, about 12” tall. Does no spread by rhizome
Tall bellflower Beautiful wildflower, self-sowing biennial herb to 5’ rich woods. Favorite Cherokee greens
Honewort. Native woodland perennial to 2’, identical to Mitsuba / ‘Japanese parsley’. Best soup stockplant
Toothwort Early spring ephemeral of rich woods. 6” Makes a small, edible tuber.
Crinkle root. Related to the above. 6” Rich woods. Makes a running root called ‘American wasabi”
Cucumber root. Attractive woodland herb, about 12”, slowly makes a colony. Very delicious root (but small)
Ramps. Spring ephemeral, going dormant now. Being overharvested. Rich woods. 6-12”, spreads by seeds.
Wineberry. Not native but widely naturalized. Delicious & attractive. Habit like brambles, but not root invasive
